First Watch: Blueberry Cornbread and Hash Skillet

Brunch is my favorite meal of the day. I would go out for brunch every day if I could. And when I do, First Watch is always among my top picks. Their regular menu has a wonderful variety of classic brunch items from pancakes to omelets, but their seasonal menu always has phenomenal options, too. On my most recent visit this week, I ordered something off both their regular menu and seasonal menu.

 

The seasonal item I ordered was the Blueberry Lemon Cornbread as an appetizer before my entree. I love cornbread and I love blueberries, so this sounded like a perfect combination. Blueberries are baked into the cornbread, and it’s topped with whipped lemon butter and powdered sugar. This dish was to-die-for. It was big enough for our table of three to share and take leftovers home. It released beautiful streaks of steam once cut into. This cornbread was chock full of blueberries—they were not sparse at all. The lemon butter on top melted perfectly once spread, absorbing into the bread to make it moist and even sweeter. The first bite—honestly, all the bites—of this dish were magical! The bread was warm, sweet, and pillowy soft. The whole blueberries inside were delicious pops of fruity flavor in my mouth. The cornbread was already sweet, but the melted lemon butter added another level to this flavor profile; it created a sharper level of sweetness with tangy and rich buttery flavors. My mouth is watering just thinking about it. The edges were wonderfully crisp, too. It felt like eating a blueberry cornbread muffin. This is by far and away my favorite seasonal dish from First Watch to date.

My entree had a lot to compete with following the cornbread, but I needed something savory to balance the sweet. I ordered the Farmhouse Hash, which comes with two eggs any style (I got mine sunny-side-up), on top of seasoned potatoes, bacon, avocado, onions and tomatoes, and cheese (which I removed). In addition, it came with a cup of fruit and whole-grain toast with preserves. This meal felt extremely filling and satisfying. Everything was hot and fresh! The egg yolks were runny and mixed well with the other elements of the skillet. There were so many flavors in this dish, most of them salty and savory. The potatoes tasted extremely well seasoned and the bacon was super crispy, just how I like it! The tomatoes and onions added a touch of acidity and sweetness amongst the other heavier ingredients. I enjoyed the fruit on the side, which tasted fresh and cool. And I don’t know what is it about the whole-grain toast at First Watch, but I love it! It’s buttered the right amount, has a pleasant crunch, and goes wonderfully with the not-too-sweet preserves.

First Watch remains one of my favorites!
